If you are deciding coconut sugar vs jaggery for Diwali sweets, here is the short answer: pick by flavour and texture, not health. Jaggery is the classic for til ladoo, chikki and anything that needs a sticky syrup; coconut sugar is the easiest swap for white sugar in kheer, powdered-sugar ladoos and baking, with a soft caramel taste; white sugar is still the cheapest and the only one that keeps kaju katli pale. All three are sugars, and your mithai will be just as rich whichever you use.

We get this question every October, usually from someone standing in their kitchen with a recipe that says "sugar" and a jar of coconut sugar they bought on a whim. So below is a plain comparison, a table you can screenshot, and the swaps we actually make at home.

What actually separates the three

White sugar is refined sucrose from sugarcane: crystals, no colour, no flavour beyond sweetness. Jaggery (gur) is sugarcane juice boiled down without the refining step, so it keeps the molasses that gives it that deep, slightly salty, earthy taste. Coconut sugar is made the same way as jaggery, only from the sap of the coconut flower: the sap is boiled until it thickens and crystallises into brown granules.

Our family estate in Sindhudurg has about 2,700 coconut trees, and the coconut for our sugar comes from there. The slow boiling is where the flavour comes from: coconut sugar tastes of toffee and light caramel, with none of the mineral sharpness of gur. That flavour difference is the heart of the coconut sugar vs jaggery choice.

Chemically, though, the three are close cousins. Jaggery and coconut sugar are both mostly sucrose, the same molecule as white sugar, with small amounts of glucose, fructose and minerals. The minerals are real but the quantities in a teaspoon are tiny, so we do not suggest choosing any of them as a source of iron or potassium.

Coconut sugar vs jaggery vs white sugar: the comparison table

Factor White sugar Jaggery (gur) Coconut sugar
Taste Clean sweetness, nothing else Deep, earthy, slightly salty molasses Toffee and mild caramel; many people find it a touch less sweet
Colour it gives None; keeps sweets white Dark golden to brown Light to medium brown
Moisture and form Very dry crystals Moist block or powder; softens in humid weather Dry granules; clumps if the jar is left open
Ladoo Powdered (bura) for besan and rava ladoo Best for til, peanut, dry fruit and gond ladoo bound with gur syrup Powder it and use like bura in besan or rava ladoo
Barfi Needed for pale kaju katli and milk barfi Softer set, deep colour; good for coconut and peanut barfi Caramel-coloured barfi; works well in coconut barfi
Kheer and payasam Standard, no colour change Add off the heat or milk can split Turns kheer beige with a caramel note; we also add it off the heat
Baking Standard Adds moisture and dense crumb; can overpower Swaps 1:1 for brown sugar; browns slightly faster
Rough price per kg About ₹60 (all-India average, Sept 2026) Varies by region and quality; usually above white sugar About ₹1,100 (our 500 g pack) to ₹1,967 (150 g jar)
Glycaemic index (GI) 65 (sucrose) Not in the international GI tables; study results vary 54 (one tested brand)

White sugar price is from the Consumer Affairs Ministry figure reported by Outlook Business. Your kirana price may differ by a few rupees.

What the GI numbers do and do not tell you

This is where most articles on jaggery vs sugar go wrong, so it is worth slowing down.

The GI figure of 65 for sucrose comes from the International Tables of Glycemic Index and Glycemic Load Values (Diabetes Care, 2008). The figure of 54 for coconut sugar comes from the University of Sydney's glycemic index service, which tested one partially refined brand sold in Australia. That is a single product, not every coconut sugar on the market, and other brands could test differently. Jaggery does not appear in the 2008 international tables, and the smaller studies that exist disagree with each other.

Even taking the numbers at face value, 54 and 65 are not far apart, and GI measures a food eaten on its own. A besan ladoo is flour, ghee, nuts and sugar together, and the fat and protein change how the whole sweet behaves. The honest takeaway is that coconut sugar is a sugar, jaggery is a sugar, and the amount you eat matters far more than which one you pick. If you or someone you are cooking for manages blood sugar, please follow your doctor's advice rather than any GI chart.

So what are the real coconut sugar benefits in a Diwali kitchen

We would rather tell you what it is good for than oversell it. The genuine coconut sugar benefits are practical:

  • It behaves like white sugar. It is dry and granular, so you can measure it with the same katori, powder it in a mixie, and swap it gram for gram in most recipes.
  • The flavour is gentle. Jaggery can take over a dish. Coconut sugar adds a caramel note that sits well with cardamom, nutmeg, ghee-roasted besan and cashews.
  • It suits milk sweets. Gur is famous for splitting hot milk. We still stir coconut sugar into kheer after switching off the flame, as a precaution.
  • It is easy to keep. Stored airtight, it stays as loose granules rather than going sticky like gur in the monsoon.

What it will not do: make mithai light, or keep kaju katli snow-white. If the colour of the sweet matters to you, keep a little white sugar for those recipes.

Swaps we make at home, recipe by recipe

Besan and rava ladoo

Powder coconut sugar finely and use it in place of bura at the same weight. The ladoos come out a shade darker with a toffee edge. If your recipe uses 200 g bura for 250 g besan, use 200 g coconut sugar.

Til, peanut and dry fruit ladoo

Stay with jaggery. These rely on gur cooked to a sticky paak, and that thread-like syrup is what holds them together. Coconut sugar melts, but it does not give the same chewy bind in our experience.

Kheer, payasam and phirni

Any of the three works. For kheer for six using about 100 g of sweetener, white sugar costs roughly ₹6 and coconut sugar roughly ₹110. Use coconut sugar if you like a caramel kheer; use jaggery for a traditional gur ki kheer, added once the milk has cooled slightly.

Barfi and katli

White sugar for kaju katli and plain milk barfi. Coconut sugar or jaggery for coconut barfi, where the brown colour looks right anyway.

Nankhatai, cookies and cakes

Coconut sugar swaps 1:1 for brown sugar or white sugar. Bake a couple of minutes less or lower the oven by 10 degrees, because it colours faster. We use jaggery in our Almond and Jaggery Cookies (₹330) because we wanted that deeper gur flavour with toasted almonds.

Which size of coconut sugar to buy for Diwali cooking

Here are the live prices for our coconut sugar from Sindhudurg coconut sap, with a rough sense of who each suits:

  • Sachets, pack of 10, ₹250: for tea, coffee or trying it before you commit.
  • 150 g jar, ₹295: one batch of kheer and a little left over.
  • 350 g jar, ₹499 or 2 jars (700 g), ₹998: enough for a tray of ladoos.
  • 500 g pack, ₹550 or 2 × 500 g, ₹1,100: the best price per kg if you are making several sweets over Dhanteras (Friday 6 November) and Diwali (Sunday 8 November).

When we pack orders in Mahape before Diwali, a sensible split is a 500 g pack for the kitchen and a jar to gift. Orders placed before 5 PM IST ship the same day, and delivery outside Maharashtra usually takes 3 to 5 days, so order by early November if you want it before Dhanteras.

If you are gifting rather than cooking

A jar of coconut sugar makes a sensible gift for the friend who bakes, alongside the usual dry fruit box. If you would rather gift something ready to eat, our Midnight Bloom Grande Premium Gift Hamper (₹1,605) includes coconut sugar, almond butterscotch ladoos, Oreo oats cookies, peri peri almonds, coconut chips and coconut millet pops. It contains nuts, so check with the recipient if allergies are a concern. For more ideas that are not a standard mithai box, see our guide to healthy alternatives to mithai boxes.

Frequently asked questions

Can I replace jaggery with coconut sugar in the same quantity?

For most recipes, yes, swap by weight. The exception is anything that needs a jaggery paak to bind, such as chikki or til ladoo, where jaggery's stickiness is doing the work.

Is coconut sugar healthier than jaggery?

Not in any meaningful way. Both are mostly sucrose and carry similar calories, and the mineral content in a normal serving is small. Choose based on taste and how it cooks, and keep portions sensible.

Is coconut sugar safe for diabetics?

Coconut sugar is still sugar and raises blood glucose. One tested brand had a GI of 54 against 65 for table sugar, but that is not a reason to eat more of it. Anyone managing diabetes should ask their doctor or dietitian.

Why did my kheer split when I added jaggery?

Jaggery can be slightly acidic and may curdle milk that is still very hot. Switch off the flame, let the kheer cool for a few minutes, then stir in the jaggery.

How should I store coconut sugar in humid weather?

Keep it in an airtight jar away from the stove and use a dry spoon. If it clumps, break it up with a spoon or give it a quick pulse in the mixie; the taste is unaffected.
