Servings: Makes 16 small cookies or 9 big cookies
INGREDIENTS
1/4 cup Good Graze virgin coconut oil1/4 cup Good Graze coconut sugar2 tbsp DIY coconut molasses (mix 1.5 tbsp of coconut sugar in 1 tbsp of hot water and heat until it thickens)
- 1 egg
- 2 tsp grated ginger (or a little less – depending on how spiced you like it!)
- 1 tbsp cocoa powder (optional, for the color)
- 1.5 cups flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon powder
- 1 tsp allspice powder
For the Icing:
Mix 1/2 cup icing or confectioners sugar and 1/2 tsp of milk or coconut milk into thick consistency for icing
METHOD
- Whisk the virgin coconut oil and coconut sugar with a mixer until combined
- Add in the egg, and mix well, until combined
- Add in the cooled coconut molasses, ginger, cinnamon powder, all spice powder, and cocoa powder, mix well
- Add in the flour and baking soda, and mix until the flour is fully incorporated and you get a dough like consistency
- Roll the dough into a ball and wrap with cling wrap and refrigerate for 30 mins
- Roll out the cookie dough into a 1/4 inch sheet and stamp out the cookies. Re-roll the cut-off dough and repeat
- Bake at 180 degrees for 10-12 minutes
Use the icing to decorate as you like!
