Gingerbread Cookies

We’ve found the perfect partner (and now you can too!) – one who is sweet, a good listener and tastes like cinnamon! Yes, the gingerbread people make for the perfect companions to your Christmas meals!

Servings: Makes 16 small cookies or 9 big cookies

INGREDIENTS

1/4 cup Good Graze virgin coconut oil1/4 cup Good Graze coconut sugar2 tbsp DIY coconut molasses (mix 1.5 tbsp of coconut sugar in 1 tbsp of hot water and heat until it thickens)

  • 1 egg
  • 2 tsp grated ginger (or a little less – depending on how spiced you like it!)
  • 1 tbsp cocoa powder (optional, for the color)
  • 1.5 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon powder
  • 1 tsp allspice powder

For the Icing:
Mix 1/2 cup icing or confectioners sugar and 1/2 tsp of milk or coconut milk into thick consistency for icing

METHOD

  • Whisk the virgin coconut oil and coconut sugar with a mixer until combined
  • Add in the egg, and mix well, until combined
  • Add in the cooled coconut molasses, ginger, cinnamon powder, all spice powder, and cocoa powder, mix well
  • Add in the flour and baking soda, and mix until the flour is fully incorporated and you get a dough like consistency
  • Roll the dough into a ball and wrap with cling wrap and refrigerate for 30 mins
  • Roll out the cookie dough into a 1/4 inch sheet and stamp out the cookies. Re-roll the cut-off dough and repeat
  • Bake at 180 degrees for 10-12 minutes

Use the icing to decorate as you like!
