4 Ingredient Coconut Peppermint Truffles

4-Ingredient Coconut Peppermint truffles

Truffles are your answer! We’ve given this classic happiness in a bite a delicious makeover using Good Graze virgin coconut oil and desiccated coconut

Servings: Makes 9 truffles

INGREDIENTS

Filling:

1/4 cup Good Graze virgin coconut oil

1 3/4 cup Good Graze desiccated coconut

90g white chocolate, chopped finely

 

Coating:

150g white chocolate, chopped finely

50g peppermint candy, chopped finely

1 Tbsp Good Graze virgin coconut oil

METHOD

  1. Heat the virgin coconut oil in a saucepan for a few minutes
  2. Place the 90g of chopped white chocolate in a glass mixing bowl, and pour in the heated virgin coconut oil. Mix with a silicone spatula until fully melted
  3. Add in the dessicated coconut. Mix well
  4. Let the mixture cool in the fridge for 10-15 minutes
  5. Make small balls using your hands, and keep on a parchment paper lined plate. Freeze the balls for 30 minutes
  6. For the coating: melt the 150g of white chocolate in a double-boiler or microwave, add in the coconut oil
  7. Dip the frozen truffles into white chocolate mix and sprinkle with the peppermint candy
  8. Freeze for another 10 minutes to let them set
