4-Ingredient Coconut Peppermint truffles

Truffles are your answer! We’ve given this classic happiness in a bite a delicious makeover using Good Graze virgin coconut oil and desiccated coconut
Servings: Makes 9 truffles
INGREDIENTS
Filling:
1/4 cup Good Graze virgin coconut oil
1 3/4 cup Good Graze desiccated coconut
90g white chocolate, chopped finely
Coating:
150g white chocolate, chopped finely
50g peppermint candy, chopped finely
1 Tbsp Good Graze virgin coconut oil
METHOD
- Heat the virgin coconut oil in a saucepan for a few minutes
- Place the 90g of chopped white chocolate in a glass mixing bowl, and pour in the heated virgin coconut oil. Mix with a silicone spatula until fully melted
- Add in the dessicated coconut. Mix well
- Let the mixture cool in the fridge for 10-15 minutes
- Make small balls using your hands, and keep on a parchment paper lined plate. Freeze the balls for 30 minutes
- For the coating: melt the 150g of white chocolate in a double-boiler or microwave, add in the coconut oil
- Dip the frozen truffles into white chocolate mix and sprinkle with the peppermint candy
- Freeze for another 10 minutes to let them set
