So here’s the how-to of another quick, guilt-free dessert made with our all-time favourite duos - Peaches & Plums! 👯♀️
INGREDIENTS (for the dough)
- 1 cup coconut flour
- 1/2 cup tapioca flour
- Coconut oil
- 2 tbsp coconut sugar
- 1 pinch salt
(for the topping)
- 2 medium peaches
- 2 medium plums
- 1 tbsp coconut oil
- 2 tbsp coconut sugar
METHOD
- Combine coconut flour and tapioca flour along with coconut oil, coconut sugar and a pinch of salt to make a dough. Cover and keep aside.
- Heat coconut oil in a pan. Add coconut sugar and slightly caramelize cut plums & peaches.
- Grease an oven safe tray and layer with dough and the caramelized fruits.
- Top with fresh rosemary leaves and bake for 15 mins.
- Cut into cubes and eat warm as it is or serve with whipped cream, a scoop of vanilla ice-cream or honey.
